Innovation Helps Highland Dairy

Jill Clark of Connage Highland Dairy took part in the Supply Chain Innovation pilot project. The dairy is based at the family farm at Milton of Connage at Ardersier in Inverness-shire and is run by Jill and her husband Callum. Connage Highland Dairy produces award winning organic, handcrafted vegetarian cheeses, using traditional techniques. The company sells to UK supermarkets, though a number of wholesalers and distributors, online at Farmers' markets and through their own farm shop.

Jill wasn't quite sure what to expect when she signed up for the SCI programme. They had been thinking about how to develop the business as a whole - improving marketing, increasing sales, and expanding markets.

But, says Jill, during the Ideas Engineering part of the programme, it became clear that a new product was the most effective route for them at that stage.

The company decided to pursue the idea of a snacking cheese product in oil, similar to Feta cheese cubes in olive oil and herbs. By taking this product forward the company is using an existing product - their award winning Cromal cheese - but adding value by incorporating it into a new product line.
