Lamb Supply Chain Pilot for Grantown-on-Spey

The first Lamb Supply Chain Workshop was held in Grantown-on-Spey.

Local farmer, Alastair MacLellan of Balliefurth Farm, talked about his experiences in direct selling and farmers' markets.

Alastair Dickie of Polaris Learning gave a butchery demonstration using two lamb carcasses, one 'in spec' and one 'out of spec'. This demonstrated the waste generated by an over fat lamb and gave an insight into cutting procedures.
